Ingredients:

175g / ¾ cup butter

175g / ¾ cup Lyle’s Golden Syrup

175g / ¾ cup dark brown sugar or muscovado sugar

350g / 4 flat cups rolled oats

2 teaspoons ground ginger
-
(Optional) ¾ cup raisins or chocolate chips
Instructions:

Preheat oven to 340°F (170°C).

In a saucepan, melt the butter, golden syrup, sugar, and ground ginger over low heat until everything is smooth and lightly simmering.

Stir in the oats and mix well to combine.

If using, add your raisins or chocolate chips once the mixture has cooled enough to not melt the chocolate.

Line a 13 x 9 inch baking or roasting tin with parchment and lightly grease.

Pour the mixture into the tin and press it down evenly.

Bake for 20 minutes, or until golden brown on top.

Remove from oven. After 10 minutes, score into squares or bars using a knife or pizza cutter.

Allow to cool completely in the tin before turning out and cutting fully.
Tips:

For a firmer flapjack, bake a few minutes longer.

For a softer, gooier centre, remove just as the edges begin to colour.

Store in an airtight tin—they keep beautifully for up to a week (if they last that long).
