Spotted Dick is one of those British puddings whose name does quite a lot of the marketing for us.
Once everyone has finished giggling, what you actually have is a proper old-school steamed sponge pudding, dotted with sultanas and raisins and best served warm with an unreasonable amount of custard.
We make our own version too, and ours is the richer, frozen, made-here option. These serve a slightly different purpose: they’re shelf-stable, come as two individual puddings, heat in about 30 seconds, travel brilliantly, and can sit in the cupboard waiting for the exact moment you decide pudding is required.
Which, conveniently, removes almost every practical obstacle between you and Spotted Dick.
Add custard, heavy cream or ice cream. Custard is the correct answer if you don't have all three, obviously.
