Fruitcake is another of those things we can thank the ancient Romans for. It was improved upon in the Middle Ages by the addition of spices and preserved fruit, and again in the 15th Century when the Pope sanctioned the use of butter.
Here is our version, a cake heavy with fruits and moist from rich butter, then topped with whole glacé cherries and almonds (unblanched, of course for a better flavour). Presented in a reusable, round cake tin, complete with window, so you can admire its beauty.
